Refrigeration along the cold chain (+4°C) and the technique of modified atmosphere mean that we can now be even more efficient. Together they prevent the growth of bacteria, fungi or molds and keep food intact for as long as possible. The technique of modified atmosphere utilizes replacing the air. It doesn’t change the taste, smell and color properties of the food at all.
